The 2-Week Wait Granola

[[The “Everyday Love” Salted Chocolate Granola]] *vegan and gluten free*

It’s GRANOLA. You can eat it on everything….which means you can eat it every day to support your fertility naturally. On that note, what about a little flax in your everyday life? That’s the secret ingredient in this recipe. It’s a simple and nutritious “hormone balancing” ingredient. It helps you metabolize estrogen, while also supporting estrogen production. It’s a super fertility food! I have two other 2-week wait recipes too: check out the brownie and the truffle recipe.

INGREDIENTS
– 2 cups oats
– 1/2 cup ground flax seed
– 1/2 cup ground almonds
– 1/2 tsp sea salt
– 1/4 cup shredded coconut
– 1/4 cup dark chocolate
– 2 tbsp olive oil
– 2 tbsp maple syrup

DIRECTIONS
1. Preheat oven to 325F
2. Grind almonds in food processor
3. In large bowl combine the first 5 ingredients
4. Melt the chocolate, oil, and maple syrup in the microwave. Pour it over mixture
5. Spread granola over lined baking sheet and bake for 20 minutes

The 2-Week Wait Truffle

[[The “Implantation” Truffle]] **gluten free and vegan**

We are continuing our fertility support recipes for the 2-week wait. The key fertility boosting ingredient is always chocolate! So this one has all of the delicious antioxidants from the last brownie recipe, like chocolate and pecans, but it also has a secret ingredient for implantation support. The secret (not-so-secret) ingredient is WALNUTS 🌰🔩🥜

Walnuts support implantation by making the uterine lining sticky. They increase the production of nitric oxide, which acts like an embryo magnet in the uterus. Not only does nitric oxide help thicken the uterine lining, but it also attracts the developing embryo. Pretty cool 😎

INGREDIENTS

1 cup raw pecans
1 cup raw walnuts
1 tbsp cocoa powder 
1/4 tsp salt
1/2 tsp ground cinnamon 
10 whole, pitted dates (that’s not a lot)
1 1/4 cups dark chocolate chips/pieces .

DIRECTIONS
.
Pulse pecans and walnuts in a food processor. Place in bowl
.
Pulse pitted dates in the food processor
.
Add in the remaining ingredients (except salt) and the nut meal and pulse
.
Scoop out 1 tbsp amounts and roll into balls. Set on parchment paper and place in freezer to chill
.
Melt chocolate in a double boiler (I just use the microwave)
.
Remove truffles from freezer and dip them into the melted chocolate
.
Transfer back onto parchment paper and top with salt. Leave in the fridge
.
Done. Chocolate truffles for your uterus!

The 2-Week Wait Brownie

Here’s the first recipe in my “2-week wait” friendly recipe collection! These are recipes that have foods that help with embryo implantation and fertility after ovulation. The 2-week wait can feel like it last’s forever, why not eat some chocolate while you’re waiting for that positive pregnancy test.

This one is chock-full of antioxidants. We love berries for their antioxidant capabilities, but did you know black beans, cocoa, and pecans are antioxidant too? Even more than some berries! Cocoa powder is the mother of antioxidants so I always include it in all of my recipes. All hail this chocolatey, uterus hugging 🤗, and easy to make brownie. [[INGREDIENTS]]
✅ 1 can black beans (well rinsed)
✅ 2 batches flax eggs (2 Tbsp flaxseed meal + 5 Tbsp water)
✅ 3 tbsp olive oil
✅ 3/4 cup cocoa powder
✅ 1/4 tsp salt
✅ 1 tsp vanilla extract
✅ 1/4 cup sugar (shhh 🤫)
✅ 1/4 cup maple syrup
✅ 1 1/2 tsp baking powder
✅ 1/4 cup chopped pecans
✅ 1/4 cup unsweetened coconut
✅ 1/4 cup dark chocolate chips
✅ 20 pitted dates

[[DIRECTIONS]]
1.Preheat oven to 350 degrees F and lightly grease a muffin pan
2. Thoroughly drain black beans
3. Prepare flax eggs by combining flax and water in the bowl of the food processor. Quickly blend
4. Add dates to flax mixture and pulse. Add a little bit of hot water to soften into pieces (if needed) 
5. Add all ingredients (besides pecans, coconut and chocolate chips) and puree – about 2 minutes
6. Add pecans, coconut and chocolate chips and pulse to combine
7. Add the batter to the prepared muffin tin 
8. Top with remaining coconut, pecans, and chocolate chips (if you have some left)
9. Bake for 20 minutes or until the tops are dry and the edges start to pull away from the sides of the tin 
10. Remove from oven and let cool for 30 minutes before removing from pan. Eat right away or store in freezer!
